This organic Pecorino comes from “Tendone” trained vineyards at medium altitude, benefiting from significant thermal excursions. Made from 100% Pecorino grapes, it undergoes soft pressing and 24h cryomaceration, followed by fermentation in stainless steel at controlled temperature. It shows a straw yellow colour with green hues and aromas of citrus fruits, white fruits, and flowers, offering a fresh, mineral, and well-balanced taste. Perfect with seafood, white meat, and fresh or medium-aged cheeses.
