VINEYARD NOTES
The Grenache and Carignan are bush vines, planted with either massal selections from France and Spain or clones from France and California. The Syrah is trellised using the "échalas" method, as in Côte-Rôtie, ensuring optimal leaf exposure. None of our vines are hedged; instead, they are all green-pruned and deleafed according to the year’s heat conditions.
WINEMAKING NOTES
The grapes are handpicked, destemmed, and cold-macerated for three days at 10°C. During the early stages of fermentation, the juice is frequently pumped over the skins to extract the finest tannins before the completion of alcoholic fermentation. The Syrah undergoes carbonic maceration, and the wine is aged in 300L barrels for 12 to 18 months, followed by 6 months in tanks. The wine is bottled without filtration.
