Hand-harvested in 10 kg boxes and sorted grain by grain on a sorting table. Our Cabernet is harvested up to three times from the same plot, due to its varying exposures; we wait for optimal ripeness, even sacrificing part of the harvest to ensure perfect, precise vinification.
