Des remparts de la majestueuse Cité de Carcassonne aux berges ombragées du Canal du Midi, des profondeurs du Gouffre de Cabrespine aux falaises calcaires de la Cité de Minerve, le vignoble du Minervois, l’un des plus vaste du Languedoc- Roussillon, s’étend sur près de 15 000 ha de vignes. L’origine y est signée du nom de 3 AOC différentes : l’appellation Minervois, Minervois-La Livinière et, un Vin Doux Naturel, le Muscat de Saint-Jean-de-Minervois.
En plein Coeur de L'occitanie, dans l'appellation Minervois, notre domaine familial de 40 ha produit une large gamme de vins. Avec Florence mon épouse, nous vivons dans ce terroir magnifique, mûs par la même passion : accompagner et faire croitre nos vignes en toutes saisons, respectant chaque cépage, chaque millésime, en s’adaptant en permanence aux aléas du climat et aux besoins du sol pour obtenir l’excellence.
Domaine CIRY CATTANEO was founded in 2015 by David Ciry, a professional oenologist and consultant, and Marion Cattaneo, a chocolatier. This small, organic estate of 6.5 hectares is located in Laure Minervois, in the Languedoc region, between Carcassonne and Narbonne, where the winemaking and aging take place. The vines are situated on two distinct terroirs: clay-limestone slopes at 400m altitude in the villages of Siran and La Livinière, and sandstone terroirs at 100m altitude in the village of Laure Minervois.
This has allowed us to create a range of AOP Minervois wines as well as several Vin de France cuvées (single varietal, orange wine, Blanc de Noir, etc.) that offer a unique expression of the terroir.
L'ESPRIT BOURGUIGNON EN TERRE CATHARE
Fort de plus de trente années d’expérience en Bourgogne dans de prestigieux domaine, nous avons souhaité se lancer un nouveau défi : reprendre un domaine viticole.
Bourguignon d’origine et de coeur, nous décidons de bousculer toutes nos habitudes et nos connaissances pour nous établir au coeur du Minervois à Caunes Minervois au pied de la Montagne Noire. Nous tombons sous le charme d' une exploitation de 20 hectares sur un petit monticule avec une vue à 360°, avec une vue sur la chaine des Pyrénées.
Sans le respect de la vigne, de son environnement rien n’est possible. Aussi notre installation nous avons choisi le labour. Place à un travail mécanique des sols, respectueux de la biodiversité et indispensable à l’expression aromatique des différents cépages.
Le travail du sol permet également de mieux comprendre la plante et les impacts du climat.
A ce jour le Domaine est certifié HVE 3 (Haute Valeur environnementale).
THE BURGUNDIAN SPIRIT IN CATHAR LAND
We more than thirty years of experience in Burgundy in prestigious wines fields, we wished to launch a new challenge : take over a wine field.
Originally from Burgundy, we decided to shake up all our habits and knowledge to settle in the heart of the Minervois region, in Caunes-Minervois, at the foot of the Montagne Noire. We fell under the spell of a 20-hectare farm on a small hill with a 360° view, overlooking the Pyrenees mountain range.
Without respect for the vine and its environment, nothing is possible. Therefore, we chose tilling for our vineyard. This mechanical soil cultivation respects biodiversity and is essential for the aromatic expression of the different grape varieties.
Working the soil also allows us to better understand the plant and the impacts of the climate.
To date, the Domaine is certified HVE 3 (High Environmental Value).
Domaine des maels was born in 2002 on the side of the Canal du Midi, on the south border of the Minervois wine region. After working as oenologists in Alsace, Morgane an Frédéric bought their own vineyard in the sunny South half of France.
On the 17 hectares shared between the Minervois and vin de pays d’Oc regions, Morgane and Frédéric farm their land in the most organic way. They try as much as they can to protect the environnement and control their impact on biodiversity and landscape : they plant natural hedges and trees with artificial birds nests to help biodiversity and cover the soil with other sorts of plant to increase the amount of organic carbon in it. Nevertheless, the first worry of Morgane and Frédéric stays the same, they try to produce the finest and most respectfull wine.
"The Domaine de La Rouviole, in the Minervois, is located in the heart of the "Petit Causse" terroir, in the Cru La Livinière production zone, between Carcassonne, Béziers and Narbonne, a few kilometres from Minerve, an exceptional Cathar site, and around forty kilometres from the Mediterranean. The estate extends over 24 hectares of vines and 10 hectares of scrubland and olive groves, where Syrah, Grenache, Cinsault, Carignan, Terret, Rolle and Grenache Blanc - the great grape varieties of the South of France - flourish. Situated on the slopes, on clay-limestone soil, the vineyards enjoy excellent south-facing exposure and exceptional sunshine (over 300 days a year). Added to this are the scents of the surrounding garrigue: thyme, lavender, rosemary, almond, fig, cherry, holm oak and olive trees, all of which contribute to the aromatic complexity of the wines. The vineyard has been managed organically since 2011 and will begin its conversion to Biodynamic viticulture in 2023.
