Ageing between 8 and 10 years in our cellars and additional rest for a few months after disgorgement.
Dosage : 4 gr/L
Tasting notes : Very luminous golden colour. Fine, discreet bubbles and a magnificent bead. Complex nose, combining aromas of stewed fruit and mushrooms. The attack overwelmes the palate with the Pinot Noir combined with the balance of the Chardonnay. Brioche and toast rise above dried fruit (hazelnut, almond) and nougatine. A round, mature wine with a silky finish and notes of candied fruit and vanilla.
Perfect with a brioche foie gras, a truffled Bresse chicken or a veal sweetbreads with morel mushrooms.
