Blend : 100% Pinot Noir.
Selective harvesting, destemming and maceration of the grapes for a few dozen hours so that the juice is naturally coloured, then racking the juice to vinify it separately. Alcoholic fermentation in temperature-controlled stainless steel tanks. Ageing for 4 to 5 years in our cellars and additional rest for a few months after disgorgement.
Dosage : 6 gr/L
Tasting notes : Ruby colour. Fine and persistent bubbles. Intense and fruity nose opening with aromas of cherries and blackberries, enhanced by notes of raspberries. Same range of flavours as in the nose. Lovely personality, intense, ample with nice tannins. Sumptuous finish.
Perfect as an aperitif and a wonderful accompaniment for game or mildly spiced dishes.
