Vinification: The harvest takes place mechanically, when the grapes are fully ripe . The vinification takes place at low temperature ( 16 ° C) after a rigorous racking to preserve the aromas and develop a great aromatic finesse.
Elevage : The Chardonnay is aged for at least 4 months on lees.
