
Grape variety : 100% Melon de Bourgogne.
Terroirs: Most of our vines grow on a silty and sandy soil. Our highest plots are located on a gentle slope with a subsoil made of « serpentinite » (volcanic
rocks) which offers a nice precocity, a good structure, minerality and aromatic
richness to the grapes.
Surface area of the estate within the Muscadet Appellation : 20 hectares
(49 acres).
Average age of the vines : 25 years.
Alcohol : 12.0% vol.
Sugar: 2g/l
Sustainability / certification : HVE3 (High Environmental Value - Level 3).
Vinification & maturing: Gentle pressing to retain the wine’s fruity aromas
followed by traditional must racking. Fermentation at low temperature 13°C to
15°C (55°F to 59°F). Ageing on lees for a minimum of 6 months with regular
stirring (« bâtonnage ») to keep them in suspension while adding roundness and volume to the blend.
Ideal serving temperature : 8°C to 10°C (46°F to 50°F).
TASTING NOTES / DECANTER DWWA 2024:
Lovely fragrant apple and pear blossom intertwine with a fresh dough richness and concentration. Beautifully saline and crisp with a classic mineral note to end.
The wine matches perfectly with oysters, scallops, sea food in general, fish (especially sushi).
