
Dealcoholising wine is a high-precision process that removes alcohol while preserving the wine’s essence: its aromas, structure, and balance. High-quality alcohol-free wines always start from a real wine, crafted with traditional viticulture and winemaking techniques.
The production begins with a classic harvest, followed by vinification and aging using conventional methods. Only once the wine is fully developed does the dealcoholisation step occur.
The wine is gently heated under very low temperatures in a vacuum chamber. By lowering the boiling point of alcohol, it evaporates at just 32–35 °C, a temperature gentle enough to protect the delicate aromas of the wine.
During this stage, volatile aromas are captured in a separate condensate. In theory, they can be reintroduced to the dealcoholised wine. However, to achieve a strictly 0.0 % ABV, this reintegration is limited.
Natural wine aromas contain trace amounts of alcohol, which would result in a wine under 0.5 % ABV if reused. Therefore, at Oh my Baie, natural alcohol-free aromas are added to restore the wine’s sensory profile accurately.
