BOLLE Launches World First- Chardonnay Reserve

BOLLE Introduces Chardonnay Reserve: A World First in Alcohol-Free Wine.

Crafted by dealcoholising AOP Burgundy Chardonnay and refermenting with Chardonnay juice from the same region, BOLLE continues to lead the category in innovation and craftsmanship.

BOLLE, the pioneering producer redefining the standards of non-alcoholic winemaking, has unveiled its most ambitious release to date: BOLLE Chardonnay Reserve, a premium alcohol-free wine crafted from 100% Chardonnay grapes sourced from one of France’s most prestigious winemaking regions and produced using BOLLE’s patent-pending twice-fermented process.

The wine starts as an AOP Burgundy Chardonnay. It is gently de-alcoholised and then refermented with fresh Chardonnay juice harvested from the same region, under specific direction from BOLLE in 2025. This unique BOLLE approach naturally rebuilds texture, depth, and complexity without adding sugar, glycerine, flavourings, or aromas, staying true to the fundamentals of fine winemaking.

Until now, alcohol-free wines have rarely begun with fruit of this calibre, nor applied a winemaking approach capable of preserving its integrity. BOLLE Chardonnay Reserve marks a significant step forward for the category, demonstrating that structure, balance, and depth can be achieved without alcohol and without compromise.

The result is immediately evident in the glass. Pale gold in appearance, BOLLE Chardonnay Reserve opens with aromas of green apple, lemon, and lime, layered with white acacia flowers, subtle hazelnut, and a delicate hint of spice. On the palate, vibrant minerality and crisp acidity meet a medium-light body, balanced by gentle roundness and finishing clean, focused, and precise. It is alcohol-free wine that delivers clarity, finesse, and confidence.

“This is not about trends or removing something from wine,” says Roberto Vanin, founder and winemaker at BOLLE. “I love wine. I grew up with wine. BOLLE Chardonnay Reserve is about respecting wine, its origins, its structure, its place at the table, while offering a choice for moments when alcohol isn’t wanted. Moderation should never mean compromise on quality.”

Vanin founded BOLLE with the ambition of challenging the idea that non-alcoholic wine must be simplified or sweetened. Instead, BOLLE takes a winemaker’s approach, rebuilding through fermentation. The BOLLE portfolio reflects that philosophy, and BOLLE Chardonnay Reserve brings precise winemaking and gastronomic intent to a category often defined by absence rather than ambition.

Gary Read, CEO of BOLLE, adds: “Chardonnay Reserve proves that alcohol-free wine can honour origin, craftsmanship, and terroir. Not a compromise but as a true expression of fine wine. We set out to show that the world’s greatest grape varieties deserve the world’s most authentic winemaking process, even without alcohol. As the non-alcoholic category evolves, it must evolve with the same care, attention, and tradition that fine wine lovers expect  and BOLLE is leading the way.”

BOLLE Chardonnay Reserve will be showcased at Wine Paris (9–11 February 2026), Hall:2.1, Stand:A 040, marking another significant step in BOLLE’s global expansion.

BOLLE Chardonnay Reserve is available to trade and consumers at an RRP of £29.99 (UK) / €34.99 (EU) / $39.99 (US). For enquiries: info@bolledrinks.com

About BOLLE: The Innovation Leader in Non-Alcoholic Wine

BOLLE has pioneered multiple industry firsts that set it apart from every other non-alcoholic wine producer:

• First and only non-alcoholic wine to undergo a second fermentation after de-alcoholisation (patent-pending)

• First and only non-alcoholic wine to undergo lees ageing after de-alcoholisation

• First and only non-alcoholic sparkling wine where over 80% of CO2 is naturally produced through fermentation

• Zero additives: No sugar, glycerine, water, flavourings, or aromas added, all character is created through fermentation

BOLLE applies fine winemaking principles more commonly associated with the world’s finest wines produced to the non-alcoholic category. The result is genuine wine structure, complexity, and mouthfeel, achieved through fermentation rather than formulation.

In addition, BOLLE remains the first and only producer to lees-age de-alcoholised wine with the 2025 release of it’s Grand Reserve Blanc de Blancs, now served and many Michelin starred venues.

BOLLE Chardonnay Reserve

Designed with fine dining in mind, BOLLE Chardonnay Reserve pairs naturally with dishes such as seared scallops with beurre blanc, turbot meunière, roast chicken with lemon and thyme, shrimp risotto, and Comté soufflé, demonstrating the growing role of alcohol-free wines in curated wine lists and pairing menus.
