The Languedoc Wine Council represents the winegrowers producing both AOP from Languedoc and IGP Sud de France wines. Our winegrowers are the mirror image of our natural surroundings. They are full of irrepressible energy with their strength of character acting as a life force drawing them towards freedom. Both creative and inspired by their unbridled passion, they are imbued with a generous spirit of sharing. Excessive and rebellious, they constantly feel the need to push the boundaries, inspiring them to venture into uncharted territory and innovate. Thet embody the new French wine scene, following their instincts, releasing themselves from the shackles of convention, pushing the envelope and shaking up the wine world. This is their promise, their bold commitment. And their ambition is to share the spontaneous pleasure that they capture in every bottle.
Founded in 1992 in Cessenon-sur-Orb, a village at the heart of the Saint-Chinian appellation, the estate has been certified "Organic Farming" since 1999. On his clay-limestone soils, Marc Valette, a "peasant winemaker" as he likes to call himself, produces wines that are authentic, fine and straightforward. The estate covers an area of 22 hectares (producing around 80,000 bottles) and produces 5 "cuvées": 4 red AOP Saint-Chinian wines and 1 white Vin de France.

Vignoble bâti en 1623, le clos est transmis et choyé de mères en filles depuis plus d’un siècle. Depuis son origine, où le blason représente une comtesse en armure, le domaine est détenu par des femmes aventurières. Notre domaine se trouve sur 4 terroirs très diversifiés comme les argilo-calcaire, les schistes, les grès mais aussi des calcaires. A la recherche de vins expressifs avec une vraie personnalité, nous cultivons 15 cépages différents et élaborons des cuvées selon les terroirs mais aussi des vins de garde. Comme nous recherchons l’excellence et souhaitons transmettre à nos enfants, notre objectif est de faire pousser nos vignes le plus proprement possible. Pour cela, nous préservons la biodiversité entourant nos parcelles depuis plus de 20 ans et notre domaine a obtenu la certification HVE 3 ( Haute valeur environnementale). 4 Terroirs à découvrir, 2 personnalités à rencontrer, 1 style pluriel à explorer. The Domaine d’Aupilhac is situated in Montpeyroux, 36 kms north-west of Montpellier. Our Winery have been created in 1989 in our family home, is right in the heart of the village. We’ve been growing grapes for over 5 generations.
A part of our vines grow exposed south-west facing "terraces" on a site called "Aupilhac". There are mainly Mourvèdre and Carignan, but some Syrah, Grenache and Cinsault grow here too.
Another part exposed north-west : "Les Cocalières" at an altitude of 350m (1150ft) where Syrah predominates, though Mourvèdre and Grenache grow here too. The most northerly facing part is planted with the four white grapes recognized by the Coteaux du Languedoc: Roussanne, Marsanne, White Grenache and Rolle (Vermentino).
We plough the land regularly; this means the roots have to force their way deep into the cool sub-soil, thus protecting the vines from seasonal drought. We treat the land ("terroir") with great respect; our absolute priority is to maintain its natural balance.
We work following an organic and a biodynamic way for the entire estate certificated by Ecocert and Demeter.
We harvest the grapes by hand. The skins must be properly mature if we have to extract the best aromas and colour, as well as ensuring silky tannins.
On young vines we carry out a summer or green harvest to remove some bunches before they reach maturity; this stops the vines suffering from the heat and helps root development.
The land’s own yeasts ensure the grapes ferment naturally.
The wines mature in casks and barrels in our underground cellar.
We bottle the wines ourselves at the Domaine – unfiltered.
We believe that work in the vineyards has far more influence on a wine’s quality than what we do in the Cellar.
Located in Occitanie, at the foot of the World Heritage site of Oppidum d'Ensérune, bordered by the Canal du Midi.
In 2023, after graduating and training between Bordeaux and Saumur, Alexandre MANTION took over the family farm and settled on 3 hectares of vines, which were vinified for the first time on the estate.
The aim: to offer fresh wines without excessive alcohol content, on this sun-drenched land!
The grapes, which come from the Coteaux d'Ensérune IGP appellation, are grown using sustainable methods, vinification is carried out according to protocols and products certified organic, and sulfites are used with caution in accordance with biodynamic thresholds.
Most of the range offers single-varietal wines.
Au cœur des appellations Languedoc et Picpoul de Pinet, entre le bassin de Thau et les collines de pins, le domaine La Croix Gratiot s’étend sur 35 hectares de sols argilo-calcaires, rafraîchis par les vents marins et parfumés de garrigue.
Anaïs et Yves Ricôme, père et fille, y cultivent la vigne en agriculture biologique et en biodynamie (AB, Demeter), avec un profond respect du vivant, du terroir et des hommes.
Du Picpoul de Pinet tendu et salin à la cuvée Bréchallune, élevée en amphore, du Pinot Noir Les Zazous au Rouge Cerise, les vins sont purs et fidèles à leur lieu d’origine. Sensible à l’art et à la musique, le domaine aime réveiller les sens et faire se rencontrer convivialité et création.
