Pearse Lyons Distillery is nestled in the heart of Dublin’s historic Liberties. Housed in a beautifully restored 18th-century church—formerly the Church of St. James—it offers a home as distinctive as the spirit it produces. Distillation started in 2012 at our brewery operations as the church was restored before opening in 2017 and named in honour of its founder, the late Dr. Pearse Lyons.  The distillery reflects a legacy of passion, innovation, and family tradition – history in the making. Pearse and his wife, Deirdre, set out to create a whiskey experience unlike any other in Dublin. With roots tracing back five generations of coopers in the city, the Pearse Lyons Distillery invites visitors on an immersive journey through the art of Irish whiskey-making—celebrating both the craft and the vibrant culture of The Liberties. Pearse Lyons Distillery opened its doors in 2017 and produces a line of award-winning Irish Whiskeys. The Pearse 5-Year-Old Single Malt was the first to be produced by a new distillery in Ireland in more than 25 years, marking a historic milestone in the re-evolution of the Irish Whiskey industry. In 2019, the distillery began making single pot still whiskey, the traditional style of distilling in Ireland. To date, our distillery experts continue to innovate with new releases and exciting barreling programs.
