The Moon Harbour distillery is the first distillery to make 100% Bordeaux whisky. It is located in an old bunker from the 2nd World War. All steps of the creation of our spirits are done on site: malting, brewing, fermentation, distillation and aging. The peculiarity of our whiskies? An ideal aging cellar. The 6 meters thick walls of the bunker allow to have a humidity and an inertia of the temperatures ideal for the process of maturation of the alcohols in barrels. A traditional & local distillation system Two STUPFLER 100% copper stills. They have been custom made to perfectly match our needs. These stills, thanks to a particular technic, allow to make only one distillation for our whisky. Breeding in barrels of Bordeaux vineyards The last stages of production, ageing and maturing in barrels, are carried out in barrels of great Bordeaux wines, such as the 1st grand cru Château RIEUSSEC, from Sauternes, but also, in barrels of red wines, as the Château LA LOUVIERE located in Léognan (33), or Château PIPEAU next to Saint Emilion (33).
