Created by the Bénédictine monks of Gellone Abbey in 804 on the lowest foothills of Terrasses du Larzac, LA CROIX CHAPTAL is heir to a thousand-year-old wine-producing tradition.
Although it is located at the southernmost spot of Terrasses du Larzac, it spreads over one of the coldest areas since the cold wind from the Larzac plateau blows as far as the confluence of two rivers, The Lergue and the Hérault.
Since 1999, Charles Pacaud, vine-grower and winemaker, has
- protected endemic varieties(Aramon, Clairette Rose & Clairette Blanche, Carignan), hedges, woods and the local flora and fauna
- let natural grass grow on the rounded stones & pebbles
- made his wines from indigenous yeasts after grapes are hand-picked on most of the plots
- aged his cuvées for a minimum of 2 winters to obtain the natural stabilisation of the wines (no fining, no filtering)
