Custodire means preserving the land, maintaining traditions, and respecting the

culture of a place. These values guide the winery and form the foundation of its

vision for winemaking. The vines are cultivated in the traditional 'alberello' system,

exclusively using autochthonous varieties, while the cellar is entirely designed with a

focus on environmental sustainability. The vineyards are located in the areas most

suited for viticulture on Mount Etna, with the goal of conserving them for future

generations in the same way they were passed down by those who previously cared

for them. The winery owns vineyards on different slopes of the "Muntagna," striving

to enhance the unique qualities of the territory.
