Max Mannes created the estate from scratch to produce his first vintages in 1978 and launched the estate in 1988. His daughter Michèle decided to take over the estate in 2021 and relies on the experience of the master of cellar Andreas Krebs. The name of the estate refers to the beautifully restored former watermill of the monks of the great chapter of Trier in which the fine wines of the house are now tasted. The wines are produced from all the traditional grape varieties of the Moselle. The aim of the work in the vineyard and in the cellar is to offer each wine the specific characteristics of the grape variety and their terroir, and this while respecting nature.
