About

On rising ground a few kms from the Mediterranean, Domaine Saint Hilaire benefits from a sunny climate but is protected from extreme temperatures by the sea. Our 30Ha of vines cleverly use the benefits of our varied terroir – with our 35+ year-old vines on the stony plateau for our intense reds and the more fertile valley for lighter whites and rosé. Our philosophy is to let nature naturally express the qualities of our terroirs and vines with low yields (c. 45Ha/Hl) and largely sustainable methods. We are helped in our aims by the famous Southern French winds – the Mistral, Tramontane and Marin which gently air the vines – keeping diseases at bay and reducing the need for treatments. A mixture of hand-harvesting and the latest technology ensure our precious grapes are delivered to the winery in perfect condition. Our Wine Ranges Le Baron : Limited production, from our best vines aged in oak barrels. Can be found in Europe’s best restaurants. Advocate : Elegant dinner wines made from grapes carefully selected from low-yield parcels and oak-aged Expression : Pure expression of the grape variety and our terroir Portofolio wines : A carefully selected portfolio of wines from our neighbouring vineyards
