The estate is located in Maligny, a hillside village on the right bank of the Serein, near Chablis. Domaine des Chaumes was created in 2000 by Romain Poullet, from a family of several generations of winemakers. The activity began with 6 hectares, and expanded in 2014 with the takeover of the farm of Roman’s father to reach a dozen hectares to date. The technical part, with the management of the vines and the vinification is managed by Romain. The administrative and commercial part is managed by Céline, his wife, who joined the domain in 2009. The vines are mainly located in the Chablis appellation (85%) and Petit Chablis (15%). A majority of the vines are over 35 years old and one is even 115 years old. We obtained the HVE3 (High Environmental Value Level 3) certification in February 2020, which rewards our environmentally and nature-conscious practices. The estate strives to produce quality wines in accordance with tradition. In 2010, we created a commercial structure to enrich our range of chablis 1er cru, d'Irancy, Bourgogne, Givry and Crémant de Bourgogne. In order to vinify wines that resemble us, we work in partnership with wineries that have the same vision of wine as us.
