The family estate created in September 1992, is located in the heart of the village of Santenay lying at the southern extremity of the Côte de Beaune, on a vineyard of 13 hectares. The twins Jean Christophe and Philippe are the third generation of winemakers at Domaine de la Choupette. Domaine de la Choupette exploits plots in Santenay, Puligny-Montrachet, Chassagne-Montrachet, Maranges They have modern equipment for the cultivation of vines and winemaking, but they remain very attached and respectful of the traditions that have made the reputation of Burgundy region. The quest for quality is their constant concern, the whole process of developing wines, starting with the work of the vine, is the subject of much attention. That's why they use old oak vats, oak barrels for wine making and ageing of the wines. Since Philippe and Jean Christophe took over the wine estate they started to apply sustainable cultivation practices. The vines are systematically plowed to air the earth and to keep the organic matter on the soil. By doing this we have a natural fertilizer. In the 1er cru appellation a natural green cover is kept on soil to maintain humidity and compete with the vines. It decreases a bit the yield but we noticed a better concentration in the vines. For more than 5 years the chemical inputs have been dramatically reduced and phytosanitary strategy have been fully adjusted to preserve the biodiversity in the vineyard.
