Nestled in the heart of the Pic Saint-Loup AOP, La Bergerie du Capucin, certified organic since 2023, was born from a deep desire to work in harmony with nature, in a healthy environment that respects both the fruit and the terroir. Guided by this philosophy, Guilhem Viau aims to craft wines that are precise, sincere, and true to his character, yet also delicate, refined, and elegant.
Grown on clay-limestone soils over a marl subsoil, the grapes develop their distinctive character through the seasons: cold, wet winters provide the moisture needed to withstand the dry, hot summers. These atypical soils give rise to wines of remarkable complexity.
The vineyard covers around fifteen hectares between the villages of Lauret and Valflaunès. It lies at an altitude of 200 meters, at the foot of the Cévennes foothills and the Massif Central. Five grape varieties are cultivated here : Syrah, Grenache, and Mourvèdre for the Pic Saint-Loup AOP, as well as Chardonnay, Viognier, Grenache Blanc, and Rolle for the Saint-Guilhem-le-Désert IGP, together forming the nine cuvées and four ranges of La Bergerie du Capucin.
La Bergerie du Capucin is, above all, a family story. Jeanne, a shepherdess who once roamed these lands of Pic Saint-Loup, walked many kilometers each day across the high plateaus. Through the Dame Jeanne cuvée and the vineyard itself, Guilhem Viau pays tribute to this strong, elegant, and spirited woman who instills her character into the wines.
