Australian craft spirits are capturing global recognition through authenticity, terroir-driven flavour and bold innovation.
Australia is home to more than 700 distilleries, spanning multiple climate zones from tropical conditions in Far North Queensland, through subtropical and temperate regions to the cool maritime climate of Tasmania.
Australia’s geographic diversity underpins a reputation for flavour-led innovation. Distillers draw on native botanicals and locally sourced ingredients found nowhere else in the world including lemon myrtle, finger lime and wattle seed.
As a relatively young category, Australian spirits are shaped by progressive production culture. Producers combine world-class technical capabilities with creative freedom, confidently reinterpreting established styles while embracing small-batch production, grain-to-glass practices and minimal intervention techniques.
Australian distillers represent a clear mindset centred on ethical sourcing and environmental responsibility. Australia’s rich natural diversity, innovative craft techniques and strong sustainability approach, position Australian spirits as premium, flavour-driven products rooted in place and provenance.

Headlands was founded in Wollongong, Australia in 2015 by four school friends. The focus from day one was to highlight the unique flavours of Australia with a portfolio of innovative spirits. With over 70 international awards including Australia's only platinum vodka, Australia's best sloe gin and nomination for Australia's best single malt, Headlands has a spirit for everyone.
The Innovation: More Lemon than Lemon
Myrlèmon is an exploration of citrus beyond the fruit itself. Born from a five-year journey to master the wild intensity of Australian Lemon Myrtle known as the Queen of the Herbs. Myrlèmon approaches citrus through aroma and texture rather than acidity, and without the use of lemons. Distilled from a base of smooth QLD sugarcane in partnership with Beachtree Distilling Co. (World’s Best Craft Producer 2024 & 2025), the spirit employs a precise 26% Pivot to capture delicate native oils in their most aromatic form.
On the nose, fresh citrus oils emerge alongside verbena, soft herbs, and delicate florals. The palate is smooth and balanced, opening with a gentle sherbet-like lift before settling into warmth and a refined, lingering finish. The texture is velvety and silky, never sharp, designed for ease and elegance.
Naturally citric-acid free and entirely additive-free, Myrlèmon moves effortlessly between moments. It may be enjoyed neat or over ice, lengthened into a clean spritz, or used alongside rum, whisky, or gin, enhancing structure and aroma without overt sweetness.
A spirit defined not by excess, but by intention. More lemon than lemon.
Sydney Rum Distillery is a proudly independent Australian spirits producer, rooted in craftsmanship and
Australian provenance. Located in the heart of Sydney with our Hunter Valley production distillery, we are
dedicated to creating premium rum expressions that reflect the adventurous spirit of the Pacific and the rich
legacy of sugarcane distillation.
Our current brand, Cargo Cult Spiced Rum, is a bold tribute to the mystique of Melanesian folklore and the
spice trade routes that once connected the islands to the world. Crafted from aged rums sourced from
Papua New Guinea and Fiji, Cargo Cult is infused with a distinctive blend of natural spices—vanilla, ginger,
clove, allspice and cardamom—delivering a smooth, aromatic profile with a dry finish that sets it apart from
overly sweet alternatives. At Sydney Rum Distillery, we champion authenticity, sustainability, and small-batch
production.
Our team of passionate distillers and blenders work with ethically sourced ingredients and traditional
techniques to ensure every bottle tells a story of exploration, culture, and craftsmanship.
With a growing presence in Australia and international markets, Cargo Cult Spiced Rum is fast becoming a
cult favourite among bartenders and rum enthusiasts alike. Whether enjoyed neat, in a classic cocktail, or as
part of a modern mix, it invites drinkers to embark on a flavour journey that’s as intriguing as its name.
