At Champagne Apollonis, we use music in the vineyard and in the cellars to create unique champagnes.

A family story
Family estate since 1675, we are winegrowers in Festigny in the beautiful Flagot valley, Marne Valley region.
Michel Loriot with his wife Martine works with Marie their daughter, 12th generation, oenologist and with their son-inlaw Alban in production.
7 hectares - 6 terroirs - Meunier 80% - Chardonnay 15% - Pinot Noir 5%
We cultivate 10 hectares with 3.50 hectares of white grapes and 6.5 hectares of red grapes.
There is two patches :
Château Le Cossu et Château Moulin de Marc.
We make 3 red wines and 3 white wines
White wines
We separate our parcels for the vinification. We vinify batches of 7 Hl up to 50 Hl.
We cultivate three grape varieties : Sémillon / Sauvignon blanc / Sauvignon gris.
The white wines are vinified in stainless steel vats with fermentation in vats. The wines are then aged on very thin lees. We want to make fleshy and tighter white wines. We use barrels, jars, wine globes and ovoid vats.
Red wines
We cultivate three grape varieties : Merlot / Cabernet-Sauvignon / Cabernet-Franc.
During the harvest, we use a ginning and sorting device as well as a sorting table. We vinify the wines softly and slowy but with the wish to produce fleshy wines thanks to warm post-fermentation maceration. The aging is made in vats and barrels.
We also produce a cuvee with integral vinification in barrels.
We offer a selection of several appellations of Bordeaux labeled under our name. We select these wines because we share the same values environmentally and qualitatively.
