Terroir and Lieu Dit: « Aux Vignes Dessus » plot is South West facing on the hill. The subsoil is mainly clay with red, blue and yellow clays, very compacted. This is a very typical terroir.

Harvests : Manual
Vinification : Pneumatic pressing of the full grapes, fermentation in 1 to 7 YO barrels.
Maturing : 14 months in barrels with a weekly batonnage during 6 months at least. Blending 1 month before bottling.
Tasting :
- Nose : fresh fruity notes of peach and white flowers.
- In Mouth : the wine is rich with ripe fruit notes and toasted notes. Nice complexity and very long finish on the palate.
Food and wine pairing : White meats and fishes in sauce. You can try with slightly tart sauces ! Surprising !
