The estate developed around the ancient agricultural farm “Dott. Domenico Toniatti Giacometti”, whose lands have long been dedicated to viticulture, alongside orchards, arable crops and forage plants. Each year, from this diversified agricultural heritage, a wide range of wines is produced. Thanks to the proximity of the Adriatic Sea, the white wines develop refined aromatic bouquets, while the red wines express distinctive fruity notes and freshness.
The vocation for vine growing in this area dates back to Roman times, when agriculture flourished thanks to fertile soils and efficient transport routes connecting the region to the Alps and beyond. Toniatti Giacometti has carried this ancient tradition into the modern era, dedicating itself to winemaking for almost one hundred years.
A Family Legacy of Wine
Throughout the generations, the Toniatti Giacometti family has continuously refined both vineyard management and winemaking techniques, always attentive to evolving market demands. From the earliest days, the winery has remained faithful to its original headquarters, acquired at the beginning of the twentieth century on land once owned by the Gasperi family.
The historic cellar, located in Latisana, in the heart of the town, still oversees every stage of production, from vineyard to bottle, including vinification and ageing. What began as bulk wine destined for local consumption has progressively evolved into a structured bottling production, capable of meeting the tastes and expectations of a broader and more diversified market.
A distinctive element of the brand identity is found on every bottle: the label featuring “Sharif di Jesolo”, a champion trotter and source of great pride for the family, who are also involved in the breeding of racehorses. An unusual and instantly recognisable symbol that reflects the deep family values behind the winery.
The Cellar: Tradition Meets Innovation
Over the years, the Toniatti Cellar has undergone significant transformations to keep pace with advances in oenological techniques and increasing quality standards.
In the past, grape pressing was carried out using a small hydraulic press, and fermentation took place in large wooden vats without temperature control. Today, winemaking is supported by modern equipment, allowing gentle or more intense pressing depending on grape variety.
Fermentation is now conducted in stainless steel tanks with temperature control, ensuring constant monitoring and preserving aromatic freshness. The role of wood has also evolved: no longer large fermentation vessels, but small French oak barrels used for ageing and refinement, enhancing complexity and balance.
Important progress has also been achieved on a biotechnological level, with the introduction of a dedicated laboratory, selected yeasts and high-quality biotechnological processes, all contributing to wines of superior consistency and expression.
The Winery Experience
The Winery is a welcoming yet intimate space dedicated to tasting, hospitality and the presentation of new wines. Created within the former storage warehouse, it preserves evocative references to the estate’s past, blending memory with contemporary comfort.
