Our winemaker & founder, Pablo Martínez, spent five years developing a world-first proprietary
process that restores what dealcoholisation removes — structure, aroma, and depth — using
organic extracts from grape skins and lees that we make ourselves.
The result: a dry, complex, food-friendly non-alcoholic wine range that feels authentic- not a compromise.
Hollow Leg is a collaboration between Pablo, restaurateur Jamie O’Toole, and wine importer Ronan Farrell, who all felt compelled to produce a non-alcoholic wine they would enjoy drinking themselves and be proud to offer to their customers. What was on the market simply wasn’t good enough.
They had a shared vision to create a range of quality wines with “everything but alcohol”, for those who truly treasure good wine, vibrant socializing and the following morning in equal measure.
Due ot our unique process, a glass of Hollow Leg contains only 9 calories/0.4 grams of sugar and is made using organic ingredients.

Hollow Leg is an old expression used to describe someone who could really put their drink away — as if they had a “hollow leg” where it all went! We liked the idea of taking a phrase traditionally associated with excess and giving it an entirely new context, flipping its meaning in a way that feels playful and unexpected.
In terms of design, Hollow Leg is about taking non-alcoholic wine into entirely new territory, and we wanted the packaging to reflect that ambition. It was important to us that the design felt vibrant, fun, and full of energy. Much of what we dislike about the non-alcoholic space, beyond the poor taste, is how joyless it often feels. The language is focused on restriction: no this, zero that. We believe choosing a high-quality non-alcoholic wine should be framed positively, as a deliberate and enjoyable choice, not as something defined by what’s missing.
