The constant concern to sublimate the Provençal terroir, the love of the land and the fruits it bears, to introduce our wines and share this passion in all simplicity : this is what drives me !!! (Serge, winemaker and owner at Terre de Mistral) Our grapes were, until 2008, delivered to a cooperative : my grandfather was a founding member and I was president. To follow through with my passion, I created the Terre de Mistral estate in 2008 with my wife. Today, helped by my children and fifteen employees, we vinify the 60Ha of vineyard, in the Côtes de Provence Sainte Victoire and IGP Mediterranean appellation. It is widely open to the public which allowed us to obtain the national award for Oenotourism in 2013. HVE certification attests to our strong environmental commitment. Our cellar has, since its creation, been the subject of regular technical developments to make it a cutting-edge tool in the development of our wines. The harvest is mechanical, at night, with plot selection. Then we carry out a pneumatic pressing after a skin maceration at low temperature. This is followed by stabling of the lees (2 weeks) before fermentation with selected yeasts. Before blending, the wines are left for a month on fine lees. All operations, from wine transfers to bottling are made with nitrogen inerting.
