Laurent JuiIlot, representing the fourth generation, manages this large 31-hectare Mercurey estate with the help of his wife Carine. In just a few decades, the estate has been extended from the Côte Chalonnaise to the Côte de Beaune with vines classified as Grand Cru in the Corton and Corton Charlemagne appellations.
Combining a respect for history and tradition with a modern approach, Laurent does not hesitate to innovate and look ahead, using expertise that he has gathered during his visits to other wine-producing regions. His father Michel, who was very well known in Mercurey, passed on his knowledge and a desire to pass on his knowledge in turn: in the summer of 2020, Pierre Juillot, Carine and Laurent’s son, joined the estate. The fifth generation has arrived!
Over the last few years, Laurent and Pierre have been exploring new ideas in both the winery and in the vineyard, with a view to adopting more sustainable practices.
As a result, the estate obtained HEV certification in 2019.
All the picking is carried out by hand, the grapes are sorted, and a vertical press is now used in the winery during the harvests. The yeasts used for vinification are indigenous and the grapes are transferred to the vats by gravity.
These changes have had an impact on the quality of the wines, which was confirmed during blind tastings carried out by the wine press :"The 2019 and 2020 vintages are a triumph and while some estates reproduce a certain style, here it is above all the terroir that is given expression. The wheels have been set in motion for the production of wines with a more pleasing, seductive, purer character".
