In Languedoc, a garden where wine becomes art
Founded in 1995 by Basile Saint Germain and taken over in 2022 by Matthieu Gufflet,
Domaine Les Aurelles near Pézenas in the Languedoc region is distinguished by its commitment to authentic biodynamic quality of its soils on ancient Villafranchian sandy-gravel terraces.
The Domaine's wines reflect the aesthetics of their terroir, combining elegance, finesse and depth.
Its total commitment to biodynamic viticulture
makes Domaine Les Aurelles a Terres de Natures signature site :
• Delicate, gentle vinification that respects the quality of the grapes.
• All the soil is worked by horse.
• Mediterranean climate, tempered by proximity to the Massif Central.
• Harvested exclusively by hand, in the morning, with meticulous quality selection carried out in the vineyard.
• Bioclimatic cellar built of solid stone to support the wines during their long maturation.
• Aged in hot-enamelled steel tanks for up to 44 months.
• Soils composed of a thick layer of gravel 10 to 15 meters deep. Part of the vineyard lies on the basaltic scree of the Escandorgue volcanic flow.
• The vines are tended like a garden by the Chateau’s permanent staff.
• Biodynamic practices in the vineyard : a voluntary, non-certified approach.
