Located in Lançon-Provence not far from Aix-en-Provence and Salon-de-Provence, Domaine La Cadenière counts 52 hectares of vines, mainly in AOC Coteaux d'Aix-en-Provence, with the three brothers Vincent, Pierre and Gabriel managing a 3 generations old family estate. Founded 3 generations ago by our grandparents, Léonie and Louis, the estate is now run by our the estate has never stopped evolving. Our grandparents passed on their know-how to our parents, Gérard and Pierrette, then we took over. We are now three brothers – Vincent, Pierre and Gabriel – running the estate. With a new generation starting to follow our footsteps as well. Since 1973, our vinifications have been carried out on site, in the estate's cellar, with a constant search for improvement and evolution. Today, the estate is in full development of its markets, in France but also on the export, with new doors opening onto Europe, the United States, Australia,... At the heart of our principles, respect for nature is a key point in our offer. Indeed, respect for the earth and biodiversity have always been our watchwords, philosophy which we made officialized in 2008, by obtaining the organic label for all of our production. One of the strength of our offer is our ability to offer wines of great quality across complete ranges, in three colors. We carry out a work of great precision on all our grape varieties, which enable us to produce both great white, rosés and red wines.
Winery owners for six generations
Let me introduce myself : Nicolas Hirissou, sixth-generation winemaker at Domaine du Moulin Hirissou in Gaillac, a land where my family has been cultivating vines for over three centuries. Deeply rooted on both banks of the Tarn river, our story is inseparable from this historic vineyard. In 2002, I took over the family estate with one mission: to write the next chapter of its future.
For more than 20 years, I have been shaping, experimenting, succeeding, and failing — always with a single goal: to craft great wines. My family and my two passions inspire me every day. Falconry and Corsica are my guiding lights, leading me toward what I like to call the search for a polyphonic wine — a wine that resonates with harmony, depth, and complexity.
Our Terroirs
The soul of a wine lies in its terroir — the soil and subsoil where the vine takes root. At Domaine du Moulin, I have the privilege of working across both of Gaillac’s emblematic terroirs. Our red grape varieties grow on the gravel soils of the Tarn’s left bank, renowned for powerful, long-lived wines. Our white grape varieties thrive on the clay-limestone slopes of the right bank, producing some of the finest whites of Gaillac.
