Co-exhibitor of RHONE VALLEY VINEYARDS
The ODYLEE Estate, created in December 2015 by Odile Couvert, is a winery located in the South of France at Violes in Vaucluse in the heart of Provence. It produces AOP Côtes du Rhône and it welcomes you in the epicurean guesthouses: The Bastide and The Mas.
It is composed of a vineyard which produce organic wines since 2020 and HVE certification since 2019. There are 17 hectares of AOP Côtes du Rhône vines – various grape varieties such as Syrah, Grenache, Carignan; Viognier, Roussanne, Clairette and Cinsault.
On the ODYLEE land, each vineyard has its own identity: the Carignan was planted in 1945, the Syrah is half a century old, the Grenache’s orientation is North-West and a young vine –Viognier and white Grenache- has been planted, in March 2017, Roussanne and Clairette in 2019, and Cinsault in 2020.
The variety of vines is part of the Odylée’s wealth, as it adds depth to the wines and gives them their personality – complex wines, ideal for laying down, the final result of each individual identity. The first vintage at the estate is 2016.
Early grape-picking have given out fully mature and high quality grapes. They have been hand-picked, sorted out and brought to the winery in small crates to be put into vats. After a period of three days cold maceration, the Grenache, Syrah and Carignan for the red are pressed and start the fermentation cycle that will transform them into wine. ‘Vins de garde’ wines –wines for laying down- are kept in barrels and demi-muids (600 liters barrels) for 14 to 18 months.
The white vines are floral and mineral with aromatic richness and fruity flavors.
The rosé are dark and strong.
In 2020, the domain started producing sparkling vines : PréamBulles is a white clairette, FunamBulles is a rosé cinsault sparking and the NoctamBulles is a dark red sparkling of syrah. In 2023, we created a "Bleu Blanc Bulles" wine dedicated to the 2023 Paris olympic games.
The whole range of wines is certified as organic products in 2020 and HVE since 2019. L'ODYLEE produces in 2022 and 2023:
- 4 whites : the Prometteuse (floral and mineral) the Soyeuse (in Acacia barrel) the Renversante is the powerful oak aged white, and the Viognier is a 100 % viognier with its flavors of white peach and abricots.
- 2 rosés : the Fougueuse (rosé vintage with full and long-lasting fruity aromas) and a rosé du terroir the Rose d'Automne (dark rosé, syrah press in oak barrel)
- 5 reds: the Généreuse (a fruity and gourmet vintage)

NoctamBulles is a dark red sparkling of syrah and "Bleu Blanc Bulles" vine dedicated to the 2023 Paris olympic games.
