Family estate located in Passy sur Marne in the Marne Valley since 1954. On a 15-hectare estate, the majority is Meunier (60%), accompanied by Pinot Noir (20%) and Chardonnay (20%), with annual production of 90,000 bottles/year.
We make Champagnes from all three grape varieties, and also some 100% Meunier Champagnes.
In the 1950s, Georges Serveaux was one of the few visionaries to believe in the development of vineyards in the Marne Valley. Penniless, he went into debt to a World War I survivor whose pension helped him buy his first hillside plots. With little idea of how he would repay the loan, he began clearing the land. In particular, he uprooted a walnut tree, which delighted a timber merchant. With his debt paid off, Georges continued to invest...
Pascal Serveaux, his son, accompanied by his wife Martine Serveaux, continued the work undertaken by Georges for forty years, developing the vineyard plantations to reach a vineyard of 15 hectares, mostly Meunier.
Today, Elodie, Nicolas and Hugo Serveaux, Pascal and Martine's children and Georges' grandchildren, continue the work begun by the two previous generations.
The wines continue to be made in the house that was built with the stones that Georges Serveaux extracted from his land to plant his first vines.
MEUNIER: AN IMPRINT
Since 1954, the meunier grape variety has had a strong presence on the estate, since Georges decided to grow it in his first plantings.
Planted mainly on clay-limestone soils, Meunier expresses fresh fruit notes, minerality and finesse due to the limestone subsoil and south-southwest exposure on the Méandre de Passy sur Marne.
